RED PEPPER SOY GRILLED SHRIMP SALAD


Combine shrimp with 2 tablespoons lime juice, 1/4 cup Red Pepper Soy Sauce and garlic in a bowl; stir well. Cover and chill for 30 minutes. Combine water melon, pineapple, pepper and cucumber in another bowl. Cover and chill. Combine the remaining lime juice, Red Pepper Soy Sauce and the olive oil; stir well and set aside. Remove shrimp from marinade, reserving the marinade. Thread shrimp onto the skewers. Divide Lettuce into 4 individual plates, and set aside. Place skewers on grill rack coated with veg. spray, and grill 3 minutes. Turn skewers over, baste with marinade, and grill 3 more minutes or until done, discard remaining marinade. Divide the shrimp and the watermelon mixture onto the 4 plates of lettuce. Drizzle about 2 tablespoons of the lime, Red Pepper Soy Sauce and olive oil mixture over each salad. Serves 4
